Outrageous Baked Beans

Makes about 1-1/2 quarts and serves lots of people; this recipe is easily doubled

As my family will testify to, I am not a big fan of taking the easy road when it comes to cooking.   If the recipe calls for lemon grass, go get some. If you are going to the trouble of making a home made pie, why not make your own pie dough? I believe there is something rewarding in mastering a recipe or getting a technique down just right. And, I believe that the end result tastes better. too.
Buy the best ingredients you can afford and use the best recipe you can find. Together these two things will deliver better results every time over anything store bought.
But, as with all rules, rules are made to be broken.
The follow recipe is one my wife found on the Internet and she gave it a try. It’s an “open-the-cans-and-dump-them-in” kind of recipe. It’s quick and easy.  And, it tastes amazing.
Every time we have made this recipe (usually we double it), family and guests leave nothing in the pot.
So even though this is an open and dump recipe, I highly recommend you give it a try.

Outrageous Baked Beans

Ingredients

1 can (14-16 oz) green beans; drained
1 can (14-16 oz) pork & beans; drained
1 can (14-16 oz) Kidney beans; drained
1 can (14-16 oz) chili – without beans
1 can (14-16 oz) chili – with beans
4 green onions; sliced, more to taste if you wish
1 medium green bell pepper; diced
1 medium red bell pepper; diced
1 cup chili sauce
2/3 cup brown sugar
4 oz bacon – cooked crisp and crumbled

Directions

On the Stove:

  1. Put all of the above ingredients in a large pot or Dutch oven.
  2. Bring to a boil for 15 minutes, stirring every few minutes.
  3. Simmer for at least 2 hours.
  4. Stir occasionally, so mixture doesn’t burn.
  5. Serve hot

In a Crock Pot

  1. Put all of the above ingredients in a crock pot.
  2. Put on high for one hour.
  3. Reduce to low and cook for at least another two hours.
  4. Stir occasionally.
  5. Serve hot.

In the Oven

  1. Preheat oven to 325 degrees F.
  2. Put all of the ingredients in a large pot or Dutch oven and heat through.
  3. Place in the oven and bake for about 2 hours.
  4. Remove from the oven and serve hot.
