Special K Cereal Treat

From a good friend’s kitchen.
Makes lots of bars which do not last long.

This is a great treat for kids and adults, too.  It is easy to make and tastes great.  My wife, Mary Ann, makes this a lot in the fall.  Usually for tailgating.  College kids really love this.  See note at end to save on clean up.

Makes one 9×13 pan of treats.  Cut them large or small; your choice.

Recipe follows.

1-1/4 cup    Peanut butter (we use chunky peanut butter)
1 cup            Light Caro syrup
1 cup            Sugar
5 cups          Special K cereal
12 oz            Chocolate chips

  1. Grease a 9×13 pan and set aside
  2. Heat peanut butter, Caro syrup and sugar in a medium sauce pan over medium heat until melted and well mixed.  DO NOT BOIL TAKE OFF HEAT RIGHT AFTER EVERYTHING MELTS.
  3. Place Special K in a large bowl and dump in hot peanut butter mixture. Mix thoroughly.
  4. Spread combined mixture into the greased 9×13 pan.
  5. Press mixture into the pan using hands or a glass with a flat bottom.  Wetting hands or glass with water helps a bit with this operation.
  6. Melt chocolate in microwave (careful not to burn it) or in a metal bowl placed over simmering water and spread the melted chocolate evenly over the mixture in the 9×13 pan.
  7. Completely cool, cut into squares and enjoy!

Note: Mary Ann has started using a large pot to melt the first three ingredients and then mixes the Special K right into that pot.  This eliminates one bowl to clean!

Katie: These are truly great. When my kids were in college, my wife and I could not go and visit them without taking along a batch of these. Hope you like them.

Can’t wait to try. Mistakenly bought a large box of Special K at Costco, but I know it will disappear in our house of teenagers now that I have this recipe!!!!
